chopped liver recipe

ingredients:
1 Kg chicken liver
2 boiled eggs
1 pilled potato
2 onions
1 apple
1/4 glass of red wine
50 gr butter
2 spoons of regular cooking oil (soy, corn, canola)
accessories:
a small pot, a big pan with a lid and some kind of a food processor.
how to make?
in the small pot boil the eggs and potato (cut into 4)
the eggs can be taken out before the potato (to be left there for another 10 min)
good, now take the apple, unpeel it, take its heart out and cut it into big cubes
slice the onion into big cubes and place it in the pan with the oil - high heat (fire)
after the onion softens lower the heat and put a lid over it for keeping the liquids
10 minutes more with the lid and add the butter (keep lid close)
after the butter has melted make the heat high again and add the liver - no lid now
the liver usually comes with non-eatable parts that doesn't look good even after chopping, that's why it should be cleaned well with a knife ( u can ask ur butcher to do so)
usually the liver comes in pairs when connected in the middle and to that the chicken's heart is connected.
the middle part should be thrown away and only some of the heart is good (it's bottom part - the top part with the white fat should be thrown)
good lock with the meat playing :)
now that u have a bowl of clean liver we may continue...
add the liver to the onion and butter - no lid - high heat
when the liver is done on its outside but still a little redish inside it's time to add the wine
add salt and pepper
after half the liquids gone put the lid back and turn the heat on low for another 10 min and turn it off
it's possible to just put everything together in the mixer and its done but...
its also possible to chopp the potatoes-boild eggs and apple first and only then chopp the liver and mix it together
texture is a little different but taste is quite the same in both ways
when ready let it chill and put it in a well closed vessel in the fridge - at first it may look a liter wet but after a few hours in the fridge it will become perfect...
it's possible to add a spoon of honey and\or a spoon of mustard into the mixer but i prefer to keep the chopped liver clean of strong spices and just serve it with some honey or\and mustard on the side
the chopped liver will be good for 5-7 days but u will finish it waaaay before that
